This coffee is from Herbert"s own farm, a "Mundo Novo"-esque blend that contains both Sidra and Tabi cultivars, known for their sweet and balanced profile. To us, it tastes like the most exquisite chocolate-covered cherries, rich yet bright with an unbelievably good texture ... so very satisfying to drink. To process this lot, cherry was in-husk rested for 72 hours in a closed container, followed by mechanical and greenhouse drying for 30 days, with a two-week stabilisation interval.
