This exquisite Wush Wush comes from SUDUS partner Finca Roble Negro in Vereda El Roble, Huila. Sweet floral notes of raspberry coulis and jasmine combine to create a stunningly elegant and structured cup. Producer Jaime Nuñez Escudero has been working on his dad"s farm for more than 15 years and is now in charge of all the processes. Here"s a bit more about Jaime and Roble Negro in his own words: We manage more than 16 types of coffee varieties on the farm, with approximately 16 hectares planted. The Wush Wush variety does very well here, and we like to use a fermentation process that is not too invasive to achieve a clean coffee with the variety"s characteristic notes. We also do other processes, such as natural, depending on the variety. We enjoy experimenting and finding the best flavor that our customers want. I personally grew up in this environment and can"t see myself doing anything else but coffee. We have managed to move forward with the farm and this project. Thank God, we already have several clients interested in our coffees, and we seek to continue growing and strengthening these kinds of partnerships. To process this lot, the coffee was floated after harvest and then fermented for 48 hours with the cherry. The pulp was then removed, and the coffee fermented for another 48 hours.
